Where it comes from
ফুচকা
Fuchka
Called puchka in Kolkata, and golgappa or pani puri elsewhere in South Asia. In Bangladesh it means crisp shells, spiced potato and chickpeas, and a bowl of tangy tamarind water. It is eaten standing up, one plate at a time, at park gates, college corners and bazaar crossings.
মোমো
Momos
Dumplings from the Himalayan region, Tibet and Nepal, that travelled across South Asia and became a street favourite. Steamed until soft or fried until golden, and always with a chili sauce that means business.
ঝাল মুড়ি
Jhal muri
Jhal means spicy, muri means puffed rice. It is tossed with mustard oil, chili, onion, cucumber and crunchy bits, shaken in a tin and handed over in a paper cone. A classic of the Bengal region, from ferry decks to park benches.

Royal Bengal tiger
The national animal of Bangladesh. It still prowls the Sundarbans, the great mangrove forest where the Ganges meets the sea, and it is a strong swimmer, crossing the rivers between the islands.

Ektara
One string, one gourd, and a lifetime of songs. The instrument of the Bauls, Bengal's wandering folk minstrels.
দোতারা
Dotara
A long-necked folk lute with several strings, played alongside the ektara in Baul and village music.
বাঁশি
Bansuri
A flute cut from a single piece of bamboo: the sound of the countryside and of countless Bengali songs.
ঢোল
Dhol
A big double-headed drum, carried and played with sticks and hands at weddings and festivals.
